Pork with dried fruits

Christmas, holidays and family meals. Being the host is easier than we think. No need to spend hours and hours in the kitchen.
We suggest the following menu: A juicy pork with dried plums and apricots and a salad with beetroots. Gourmet!
Ingredients (serves 10)
- 2 kg pork loin
- 1 bay leaf
- 1 small cup dried apricots
- 1 small cup dried plums
- 1 small cup freshly squeezed orange juice
For our sauce
- 2 tablespoons honey
- 1 tablespoon mustard (French type)
- Orange zest from one orange
- Plenty of olive oil for our pan
- Salt and pepper
For the salad:
- 3 cups boiled beetroots
- 1 apple
- Coarsely chopped walnuts
- 1 plain yogurt
- 3 tablespoons mayonnaise
- 2 tablespoons olive oil
- Garlic clove (optional)
Preparation:
Simmer the pork with the bay leaf and the pepper for about an hour and a half. At the same time, boil the beetroots.
Meanwhile, preheat the oven and prepare the sauce by simply stirring all the ingredients together.
Remove the pork from the pot and place it in a large pan with the plums and apricots and drizzle it with the sauce. Add plenty of olive oil in the pan and some of the pork broth. Cook for 40 minutes at 200 degrees and open the oven occasionally to drizzle the meat with its sauce.
Cut the beetroots into cubes with the help of a cutter. Grate the apple and pulverize the garlic. Mix the olive oil, the mayo and the yogurt and then add to this mixture the beetroots, apple walnuts and garlic.
