Pork schnitzel

Ingredients
- 1 pork tenderloin
- 100 gr breadcrumbs
- 59 gr cashews
- Salt and pepper
- 1 egg
For the sauce
- 1 avocado (mashed)
- 300 g. yogurt
- 1 bunch of dill
- 2 lemons
- 1 tablespoon spicy mustard
- Salt and pepper
Execution:
Take the pork tenderloin and with a knife carve it in the middle and spread it. Then, beat it in order to make it softer. Add on it salt and pepper and cut a bit the edges of the schnitzel.
Combine the breadcrumbs and crushed cashews.
Dip the schnitzel in the egg and then place it over the mixture of breadcrumbs and crushed cashews. Afterwards, place the schnitzel in the pan with a bit of oil.
Add in a deep bowl all the ingredients for the sauce and mix with wire.
Remove the schnitzel from the pan, place it on a plate, garnish with the sauce and enjoy.
